Missing Disney? Whip up a pineapple treat!
Dole Whips were never a staple when I visited Disney World as a kid. But as an adult? It’s not a trip to Disney without one! I’m not sure why it took so long for me to discover them. And I’m not sure why I haven’t had one with rum yet (it’s on the list for our February 2019 trip!).
But now that I know they exist and I know how incredibly delicious they are, I really miss them between Disney trips. So I found a copy cat recipe that tastes delicious and is super easy to make!
All you need is frozen pineapple chunks (Dole brand is obviously preferable), coconut milk, sugar, lemon juice, lime juice and salt!
2 cups of frozen pineapple chunks
1/3 cup of coconut milk
3 tablespoons of granulated sugar
1 teaspoon of lemon juice
1 teaspoon of lime juice
1 pinch of salt
Put it all in your food processor. Blend until smooth. Poor into your favorite Disney cup. Decorate with pineapple and a fancy straw. TADA! You can pretend you’re back in Disney.
